Products
The
chestnut
The forests of Trassilico are rich of chestnut
trees. In
the past the
chestnut has represented an irreplaceable food resource for
the inhabitants
of the place. They survived by cooking it on various ways.
This is the
reason why the
Castagno tree is called the
"tree bread" .
Directly
from the past cooking traditions, tourists will taste delicious recipes
with
chestnuts the suggested food are "Castagnaccio", and "Flour of
Neccio”
Mushrooms
The forests
of the Garfagnana are particularly rich of "porcini" edible
mushrooms,
that can be collected in the autumnal period. Delicious recipe are
prepared with
the mushrooms following Garfagnana
traditions and savour
of the origin places.
Il farro
della Garfagnana
This Farro comes cultivated in Garfagnana, in the
north-west of the
Tuscany (prov. of Lucca). Dressed
grain is produced from the local population of Triticum
species dicoccum
Schrank (). Farro is the more ancient cereal arrived to our
days,
already cultivated in the seventh millenium a.C. in
Mesopotamia, Syria,
Egypt and Palestine. In Garfagnana the
cultivation of the farro hasn't never interrupted.
